food: butternut squash curry soup

Yum! An easy, delicious soup to make on a cold winter day.


1 med-large butternut squash

2-3 pears (depending on your preference for sweetness)

1 onion

2 tsp. curry powder

salt and pepper to taste

oil for pot


Chop squash, onion and pears into large chunks. Sauté in pot over low flame with a little bit of oil, until squash is softened. Add water to cover, add spices and bring to boil. Simmer for about 30 minutes, then pureé until smooth and creamy. Enjoy!

Total prep time: 15 minutes. Cook time: 1 hour. Yields: 8-10 adult servings.
